How to make a raspberry layer diabetic cake for children diet for diabetics. First, Split each cake into two layers, put together with alternate fillings of plain butter cream and raspberry jam.
Make 1 lb. Gelatin Icing coloring it pink with a few drops of cochineal. Reserve some for piping, and pour the rest over the top of the cake, smoothing round the sides with a palette knife. When icing is set, remove onto a silver cake board. Cut a 7-inch square of greaseproof paper, draw in a circle, divide into eight sections as for a permanent template. Using a tulip wine-glass as a pattern, draw semi-circles in each section.
Fix to centre of cake with a pin. Now draw in a line an inch from end of strip with side of cake so top of line joins one sectional divider on top of cake and mark point where next divider joins strip.
