How to Find An Easy to Prepare Eggplant Dish

I was looking for something special to cook for dinner. I have always loved eggplant and wanted to be able to have a side dish that was different. After searching online I came across Easy Gourmet Recipes. I found an eggplant dish that sounded pretty good. I decided to give it a try and found that it was very easy to prepare. When I had our dinner ready, I sat the table and had everyone come in. Everyone enjoyed the dinner, but the eggplant was the item that everyone liked most. I bookmarked the site for future use. The recipes are a great addition that can be prepared at home easily.
