Biscochitos are the official state cookie of New Mexico. They were served normally during Christmas, at weddings, or any other special occasion. Biscochitos are actually a type of shortbread. The recipe can be a little tricky to make though. If you are keen, you need to put in a bit of effort to make these delicious cookies.
They have a long history that stretches all the way back to Spain. These little cookies are sometimes called Mexican Wedding cookies. In fact, the name of this delicious little cookie has caused quite a stir. There was a debate on how the name would be spelt when the cookie was made the official state cookie in 1989.
